When in the interview should I bring up caching?

After you can name the read bottleneck in numbers, and not before. Adding Redis to the diagram in the first two minutes reads as a memorised component, and the first question back will be what it is for.

How much detail is expected?

Enough to show the decision was yours: what you cache, the key, the pattern, the expiry and why that number. Then the failure that matters for this system. Listing every possible caching problem is worse than picking the one that applies.
